Why do people need this? If you don't want a local network controller, Unifi will host one for you. You simply create a new site, connect your APs, switches, etc to your existing network and use the cloud based controller to manage. TPLink Omada has a similar option available.. The only drawback on the U7 pro is the 2.4 Ghz max output is 22 dBM vs 26 dBM on the U6 LR. Most importantly, the U7 Pro is now multi-gig like the U6 Enterprise.For an IoT network I would set it up like an even more isolated DMZ vlan. Don't let anything in or out that isn't trusted. This means setting up a new device is a real PITA. You'll need to watch firewall logs to see what networks/IPs the device needs connections too and then allow them through the firewall.getting 2.5G to the AP will require a switch like the FLEX-HD with a standard SFP module on the LAN port, or going directly to the AP using a non-ubiquiti SFP module with ‘gearbox’ functionality.
